Last week, I was strolling through downtown Lawrence, KS before dinner when I came across these flowers. They caught my eye and I had just had to snap a photo of them.
Lavender seems so out of place in mid-October. Lavender makes me think of the new promise of Spring or at the very least leisurely summer evenings. The day I snapped this photo, Autumn breezes were blustering about showing us mere mortals just how powerful she is.

Dutch-Style Apple Pie in Oat Crust
I just love autumn. It’s one of my favorite time of the year. The multitude of colors, the strong green leaves turning to mellow yellow and orange, until a dark outburst of red and brown appears, offer me a sense of solace and relief.
But, there’s more to fall than the rainbow of hues that doesn’t stop dazzling anyone’s eyes. Fall also means more laid back time for yourself, and of course, fun, fun, fun in the kitchen. Because I spend more time at home, I try to keep myself busy by doing some gastronomic experimenting. And with Thanksgiving just around the corner, it’s high time to gear up for the festive season.
One of the most favorite fall desserts that I can’t help but prepare year after year is the Dutch-style oat-crusted apple pie. Here’s my recipe. You can try this at home and enjoy that warm, homey feel of fall right in your taste buds.
For the crust, I really want to savor the oats, so I use a generous serving of it. Here are the ingredients for that:
•2-3 cups all-purpose flour
•1- 1 ½ cup brown sugar
•1/2 to 1 cup oats
•1 cup melted butter
For the filling, prepare the following:
•1 cup white sugar
•1/4 cup cornstarch
•1 ¼ cups water
•3 cups of apples, peeled and diced
•2 tsp vanilla extract
Here’s how you do it:
1. For the pie crust, mix all the ingredients. Set aside half a cup. You will use this for topping later. Layer the mixture on an ungreased pie plate of your desired size. Then set aside.
2. For filling, in a large saucepan, mix sugar, cornstarch and water. Place on medium heat and wait until it boils. Stir continuously for 2 minutes and wait until thick and creamy before removing the heat. Add apples and vanilla and stir.
3. Pour the apple mixture on to the crust, then layer it with the extra crumb mixture. Preheat oven at 350°, then bake the pie for around 45 minutes. Check if the crust is golden taking it from the oven. Set aside and serve warm to end any fall meal with a sweet delight.

Recently, I made the very difficult decision to cease rockin' pageant hair on a daily basis. I came to this decision because I got tired of spending an hour styling my hair every day. For the past couple of months, I have opted for a more subdued style which bored the heck out of me.
Until a couple of weeks ago, my hairstylist convinced me to throw some highlights in my hair. Let me tell you, it has made all the difference. I feel a lot lighter and my new regimen has enabled me to work out longer in the morning.
